The Chef's Table at Sea

From foredeck breakfasts to the rijsttafel, the galley is one of the great performances of a charter. Here is the menu.

The most asked question before a first charter is rarely about the diving or the dragons. It is about the food. The honest answer is that the galley is one of the great performances of an Indonesian charter, and it runs from first coffee to the last course of a beach dinner without ever repeating itself.

Every yacht in the fleet sails with a dedicated chef, provisioned for your preferences months in advance. What arrives at the table is part fine dining, part archipelago, and entirely personal.

The Morning Shift

Breakfast happens wherever you want it: the shaded table, the foredeck daybed, a sandbar if the tide agrees. Tropical fruit, strong Sumatran coffee, and whatever the galley learned you love on day one.

The Rijsttafel

The signature meal of these waters is the rijsttafel, the rice table: a dozen small dishes at once, rendang beside sambal beside grilled fish that was swimming that morning. Done properly it is a tour of the archipelago in one sitting, and the fleet's chefs compete quietly on whose is best.

Watching the Hands

Ask to stand in the galley for half an hour. The plating is hotel-grade, the knife work is quick and quiet, and on several boats the chef will run a cooking class on a slow afternoon at anchor. Guests who arrive as spectators tend to leave with a sambal recipe and strong opinions about nutmeg.

What It All Includes

Full board is part of every charter rate: all meals, snacks, and the standard of provisioning that remote cruising demands. The complete picture of inclusions lives in our guide, and the dinner that ends up on a beach under lanterns has a story of its own in the journal.

Tell us what your table loves and what it avoids. The galley will do the rest, and it will do it twenty one meals in a row.
